Hearty Vegetable Soup





If you had to choose one food to eat for the rest of your life, it would probably be soup. Think about it. There are a million ways to make it, so you'd never be bored, right?


You're going to want to add this recipe to the list of food you could eat for the rest of your life.





Ingredients

1 tbsp avocado oil

1 tbsp gluten-free flour

1/2 an onion, diced

2 cloves of garlic, minced

3 cups vegetable broth

1 carrot, chopped

2 celery stalks, chopped

3 potatoes, diced into small cubes

1 tsp salt

1/2 tsp pepper

1/4 tsp paprika



Get close. Can you smell the goodness?!

Directions

1. Heat a pot on medium and add the avocado oil and flour. Stir together for 1-2 minutes until flour begins to brown.

2. Add onion and garlic to the mixture, stirring until coated. Add 1/4 cup of vegetable broth and continue to stir until the onion and garlic have softened (3-5 minutes).

3. Add remaining vegetable broth as well as carrots, celery, potatoes, and spices. Bring to a boil.

4. Once boiling, turn down to a low simmer and allow to cook for 15-20 minutes until all the vegetables are soft and soup is thick.


Serve it with a crunchy bread or crackers (in our house, we love to break up crackers in our soup) or just eat it as is. This is lick-the-bowl-at-the-end kind of good!
