Recipe: Chocolate Peppermint Cookies (vegan & gluten-free!)

I am obsessed with chocolate. I want chocolate all.the.time.
This recipe is inspired from here. I praise her greatly for the aquafaba deliciousness! If you've never tried aquafaba before - you're in for a REAL treat!
I adjusted the recipe for sugar and added dōTERRA Peppermint essential oil. SO GREAT!!!

Ingredients:
4 tbsp aquafaba (which is the juice inside a can of chickpeas!)
1/2 tsp baking soda
1/2 cup coconut sugar
1/3 cup cocoa powder
1 tsp vanilla
1/2 cup almond butter or natural peanut butter
1/4 cup vegan chocolate chips
2 drops Peppermint essential oil
Directions:
Set oven to 350 degrees. Mix wet ingredients together in one bowl, dry in the another bowl. Then combine! Once incorporated (don't over-mix), scoop small spoonfuls on a cookie pan and pop in the oven for 10-12 minutes. Remove from the cookie sheet once cooled.
Eat 'em up!
