Recipe: Vegan Honey Recipe

My son woke up last night crying so much about his throat. It was one of those moments as a mama that just broke my heart.

We very VERY rarely catch stuff in our house (thanks On Guard!), but clearly something was going on.

So I trusted my handy Pinterest app to come up with a solution.

Honey. Honey and oils.

Being vegan, we don’t do the honey thing. I know, sounds silly, right? But Bee Movie has an excellent point.

I dear friend had given me some vegan honey from a local market and I had the tiniest remains left in a mason jar. I scraped what I had, added one drop of Lemon essential oil, and gave it to my son to swallow down really slowly.

The screaming stopped!

It coated whatever issue he had and the Lemon did it’s thing and YES! He fell right back to sleep.

But now I was out of my vegan honey.

It was time to get crafty.

After googling a few recipes, I came up with my own. All of them called for white sugar, and we don’t do white sugar in our house.

So here’s what I came up with

Ingredients:

  • 6 apples, cut and cored (we had organic Gala apples in the house, so I used those)

  • 3/4 cup of coconut sugar

  • 1 cup water

  • 1 tsp lemon juice

Directions:

  1. Blend apples and water until pureed.

  2. Using a strainer, cheeseloth, or nut milk bag, strain the juice from the pulp.

  3. Put juice in a pot on the stove and add sugar and lemon juice.

  4. Bring to a rolling boil on high heat, then turn down to medium and stir often until liquid reduces until the thickness you desire (about half of what you started with).

  5. Pour into a mason jar. Allow to cool before covering.

This creation was DELICIOUS and made as much as what you see in the photo.

For my little man, I gave him a small spoonful with one drop of Lemon essential oil. He only needed that one extra dose.

So if anyone needs vegan honey, we've got plenty. YAY!!
