Recipe: Tofu Scramble

One thing about not eating eggs is….well….no scrambled eggs.
We sometimes like to have a “big breakfast” {ahem…have like a 5-course meal for breakfast} and the one missing thing was scrambled eggs.
But, as plant-based living continues to grow, some wizard somewhere invented the TOFU SCRAMBLE recipe! Oh, bless you, sweet wizard!
As with most things, I make them once then turn them completely into something of my own.
This recipe is no different.
I’ve whipped this baby up many times and sometimes wish I told my kids that it really doesn’t taste that good. Because now they like to eat it. And that doesn’t leave as much for me. Oh the sacrifices of motherhood!

Although I’ve added Coriander to this recipe, you can try Basil, Fennel, Thyme, Rosemary, Cilantro or whatever spice-based essential oil calls your name.
2 tbsp avocado oil
1/2 onion, diced
1/2 yellow pepper, diced
1 block of organic/non-GMO firm tofu
1 tbsp garlic power
1/2 tsp salt
1 tsp onion powder
1 tsp turmeric
1 toothpick Coriander essential oil (or see above notes for other choices)
2 tbsp unsweetened non-dairy milk
1 huge handful of organic spinach
1/4 cup nutritional yeast
1/4 cup Vegan Shreds (shredded vegan cheddar cheez) (optional)
Put 1tbsp of the oil in a heated pan and add peppers and onions. Cook on medium heat until soft, about 3-5 minutes.
Crumble tofu into the pan and combine with the onions and peppers, cooking on low.
In a small bowl, combine the garlic powder, onion powder, salt, turmeric, and 1tbsp avocado oil together. Add one toothpick amount of Coriander essential oil (that means sticking a toothpick into the orifice of the oils cap) to the mixture and stir it in.
Pour the spice mixture over the tofu mixture in the pan. Stir.
Add the non-dairy milk and spinach. Stir for 1-2 minutes until spinach becomes wilted.
Add nutritional yeast and continue to mix. Cook for another 1-2 minutes.
If using, add the Vegan Shreds for some extra cheeziness! Allow 1-2 minutes for a melting effect then serve hot with some toast!
