Recipe: Raw Mint Chocolate Caramel Balls

I know, this picture looks somewhat silly, with the plastic wrap and all. Here's the thing, we're on a 5-week trip to Las Vegas and, while I've got my trusted VitaMix, wax paper wasn't on my packing list. So plastic wrap it is!

My boys LOVE Lara Bars. And what's not to love?? REAL food made into a delicious, easy-to-take-along bars. They could gobble up a box in one siting if I let them. Instead, I decided to make my own because, well, it's like a secret challenge of mine to re-create things I find on store shelves.

Ingredients:

1/2 cup raw cashews

1 cup pitted dates

1 tsp vanilla

1/4 tsp salt

2 tsp water

1 drop Peppermint essential oil

1/2 cup raw homemade chocolate chips (except in this recipes I didn't have what I needed to make my own, so I used Enjoy brand of mini chips...not raw)

Directions:

Blend or process the first 6 ingredients until chunky. Add chocolate chips and process slightly to combine. Form into balls or bars and place on wax paper (ahem...not plastic wrap....do as I say, not as I do....) on a cookie sheet. I let them firm up a bit in the fridge before eating.

Last step: hide them far in the back of the fridge so no one else will find these scrumptious morsels.
